22 and a half hours into the project I am still alive, I'm pleased to say. Dinner was a stuffed aubergine, the stuffing being green lentils, tomato, chopped walnuts and aubergine, topped with mushroom, olives and a crumby sort of thing made of ground-up bread crust and more walnuts. I must say that it tasted jolly good. My problem with it is that it took 90 minutes to prepare and only 15 to eat. I might have to make do with a Linda McCartney pie tomorrow, or just beans on toast (with no butter).
I've done various stuffed vegetables in the past, and I've always noticed there's a problem with all the recipes: you have to make a filling, then scoop out most of the "meat" of whatever the veg is, to create a cavity which may be duly stuffed. But this then leaves you with the best bit of the veg, wondering what to do with it. We can't throw it away, being waste conscious ethical types. Save it for tomorrow and the problem is multiplied should we decide to stuff another vegetable - and let's face it, what else can we do to make a marrow interesting? So most recipes dictate that you mix in the scooped-out heart with the stuffing. You can see the illogicality already can't you! It don't bloody fit back in!!!
Well...I was thinking of veg stew tomorrow anyway - not going to spend the whole month cooking. Aubergine pulp stew it is then!
